Simple Spring Recipes from Kluge's Kitchen
Spicy Cucumber-Avocado Soup
An easy, healthy recipe | Serves 4-6
1¾ English cucumber (about 1-1/3 lb), cut into ½" pieces
1 cup plain low-fat yoghurt
1 teaspoon fresh lime juice
Salt and pepper to taste
¼ teaspoon chopped, fresh jalapeño chile with seeds
1 cup small ice cubes
Garnish:
½ firm, ripe California avocado
3 tablespoons chopped fresh chives
1. Peel, pit, and dice avocado.
2. Blend all ingredients except avocado and chives in a blender until very smooth, about 1 minute.
3. Pour into serving bowls and garnish.
Spring Sauce
This super simple recipe works with nearly everything fish, chicken, meat or pasta.
1 tiny bunch arugula
1 bunch dill
2 shallots, chopped
1 pint sour cream
3 tsp Dijon mustard
Salt and pepper to taste
1. Blend the arugula, dill and shallots in a food processor.
2. Add the sour cream, mustard, salt and pepper.
3. Serve cold.
